Such a Clever Idea

Today, the "Chef" and I took Grace to bike camp, then set out to get a swack of groceries to begin making some freezer meals for post babe.

After getting the crockpot filled with Cacciatore, we set about baking muffins.  A woman on a pregnancy forum I am part of, freezes her muffin batter in a ziploc bag, then when she needs it, takes it out, lets it defrost for about 1/2 an hour, and voila, fresh muffin batter!  I wish I would have thought of this a LONG time ago.  Such a clever idea and what a time saver!  She just trims off a corner of the bag, then squeezes out the batter into the muffin pan just like using an icing bag!



Aidan and I made Banana Oat muffins today.  These are really good on their own, or with blueberries or chocolate chips added :)  For the sake of the first freezer experiment, I left these ones plain.   Making a double batch gives us some to enjoy now, and some to enjoy in four weeks time.  Given I'm likely to forget, I labelled the ziploc bag with todays date, the date four weeks from now (our due date!) when they should be baked by, as well as marked it on our fridge calendar.


I figure if for the next few weeks, we do a batch a week, this will really help in the post partum period for snacks, for when we have visitors, and for Grace to bring to those first weeks of Kindergarten.

Have any good wholesome muffin recipes to share?  I'm in need of some!

I made pizza,chili, and soup for the freezer. I also froze several loaves of sandwich bread.
